Dr. Ernest Edward Quimby, Jr. Obituary

Ernest Edward Quimby Jr., known to many as Dr. Ed Quimby, passed away peacefully on Friday, December 26th at The Crossing Clarity Hospice in Baton Rouge.

Ernest lived a life marked by discipline, achievement, and dedication—both on the pitcher’s mound and in his professional career. A gifted athlete from a young age, he graduated from Rayville High School in 1961, where he distinguished himself as a standout pitcher and earned All-State honors in baseball that same year. He continued his baseball career as a 1963 All-Conference pitcher at NLSC, later going on to pitch as a relief pitcher in Minor League Baseball within the San Francisco Giants organization—a testament to his talent, work ethic, and competitive spirit.

Following his athletic pursuits, Ed turned his focus to academics and medicine. He studied General Studies at Northeast Louisiana University, Class of 1972, and completed Pre-Medical and Pre-Dental studies at ULM. He went on to earn his Doctorate of Dental Surgery from LSU Health School of Dentistry, graduating on May 31, 1976.

Dr. Quimby practiced general dentistry in Baton Rouge for over 40 years, dedicating his career to serving his community with compassion, integrity, and commitment to patient care. His practice touched generations of families, and he was deeply respected by patients and colleagues alike.

Ed later remarried Suet Winnie Quimby, with whom he shared companionship and support. He is survived by his twin daughters, Dr. Keleigh Q. Lascari, DDS and Kendahl C. Quimby, BCO, FASO. He was a proud grandfather to Mason Swenson, Cohen Lascari, and Jack Lascari, who brought him immense joy and pride.

Dr. Quimby will be remembered for his strength, determination, and the lasting impact he made—on the baseball field, in his dental practice, and most importantly, within his family.
